I made this cake with a vegan and glutenfree puff pastry yesterday. It was delicious! Thank you for sharing the recipe. And now I am wondering if it is possible to remove the egg? Or what function does the egg have?

Hi Sanna! The egg adds moisture and richness and helps bind everything together (It also helps the batter rise during baking). For an eggless version, you can try the recipe below :)

30g sugar

40g vegan unsalted butter

30g vegan greek-style yogurt or unsweetened apple sauce

40g almond powder

18g GF flour

1.5g baking powder

pinch salt

1. Mix the sugar with softened vegan butter until creamy. Add the yogurt/apple sauce.

2. Sift the dry ingredients together and add to the mixture. Chill the mixture in the fridge for about 30 minutes.
