Mango Peach Oolong Layer Cake
Mango, peach & oolong tea layer cake🥭🍑 Soft almond sponge brushed with peach oolong syrup and topped with mango peach confit & cremeux, oolong butterfly pea flower whipped ganache and mango glaze.
The oolong butterfly pea tea creates a beautiful, natural blue hue and has a subtle floral flavor that goes perfectly with the fruity elements in the cake.
For the decoration, I used fresh mangoes that I shaped with a parisienne spoon and delicate, translucent oolong tea jelly. I also piped some vanilla whipped cream on top, but you can use leftover oolong whipped ganache instead.
