Lemon Yogurt Loaf Cake
Moist and tender mini lemon cake with a golden exterior and a tangy lemon glaze🍋 This delicious cake is so easy to make and bursting with bright citrus flavor that’ll have you coming back for seconds.
Flavored with freshly squeezed lemon juice, lemon zest and yogurt, it’s delightfully refreshing and tastes like sunshine on a cloudy day☀️ Perfect little treat for snacking or gift-giving!
Recipe makes about 22 mini loaves (I used a 8cm x 3cm x 3cm rectangular silicone mold).
Lemon yogurt loaf cake:
180g sugar
zest of 1 lemon
2 eggs
50g unsalted butter, melted
50g neutral oil
60g milk, room temp
60g yogurt (plain or greek)
30g lemon juice
5g vanilla extract
210g all-purpose flour
5g baking powder
2g baking soda
2g salt
In a large bowl, mix the sugar with lemon zest.
Add the eggs and whisk for a few minutes until the mixture becomes lighter in color.
Whisk in the melted butter and oil.
Add the lemon juice, yogurt, milk and vanilla. Mix well to combine.
Sift together the dry ingredients and add to the mixture. Whisk well until there are no lumps.
Pour the batter into a greased rectangular silicone mold and bake at 165C for about 15 minutes until a toothpick inserted in the middle comes out clean. Let cool.
Lemon glaze:
60g icing sugar
14g lemon juice
Sift the icing sugar in a bowl. Add the lemon juice and mix well.
Brush the glaze on top of the lemon loaves and decorate with finely chopped pistachios and lemon slices (optional).
