Chocolate tiger financier with delicately crisp crust and soft, chewy centerš¤ These little treats have an irresistible nutty, buttery flavor thanks to the browned butter & almond flour and pair beautifully with the silky smooth chocolate ganache.
If your financier mold doesnāt have an indentation like mine, remove a bit of the center with an apple corer or a teaspoon, then fill with the ganache. You could also omit the ganache and top your financier with sliced/slivered almonds or desiccated coconut- just sprinkle on top of the financiers before baking.

Recipe makes about 20 financiers.
Chocolate tiger financier:
160g unsalted butter
120g egg whites
165g icing sugar, sifted
55g almond flour
55g all-purpose flour
pinch salt
4g vanilla extract
70g dark chocolate, chopped into fine pieces
Place the butter in a saucepan and cook over medium heat, whisking occasionally, until the butter turns into golden brown color. Transfer to a bowl and let cool to 50C.
In a large bowl, mix together the egg whites and icing sugar.
Sift together the almond flour, all-purpose flour and salt and add to the egg white mixture.
Add the vanilla and browned butter. Whisk well.
Stir in the chocolate pieces. Place cling film directly on top of the batter and let chill in the fridge for at least an hour (overnight works as well).
Pipe the batter into a greased financier mold (fill it about 80% of the way up) and bake at 175C for 10 minutes. Let cool.
Chocolate ganache:
40g semi-sweet or dark chocolate chips
40g whipping cream
Place the chocolate and cream in a small bowl and microwave for about 30-40 seconds until the chocolate is melted. Mix well until smooth.
Pipe or spoon the ganache into the middle of the financier. Decorate with edible gold leaf.
